Serves 12


Ingredients:

1 1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 cup soft or melted butter or margarine
2 eggs
1/2 cup milk
1 small banana, diced
1/2 cup chopped pecans or walnuts


Method:

  • In mixing bowl, stir together flour, sugar, baking powder, salt and nutmeg. Stir in butter.
  • Beat together eggs and milk. Blend into mixture just enough to misten flour. Do not overmix.
  • Fold in banana and chopped nuts. Spoon batter into 12 greased medium-sized muffin tins.
  • Bake at 200°C for 20 minutes or until muffins are lightly browned.

    hey try this banana muffin recipe!
    INGREDIENTS
    250 grams butter, room temp
    1 cup sugar
    3 bananas ripe
    2 cups self raising flour
    3 eggs

    INSTRUCTIONS
    Cream together butter & sugar, then add in one egg at a time mixing well between each egg. If the mix looks curdled at this point, don't worry. Mash bananas & mix in. Sift flour & mix. Spoon into patty/muffin cases. Cook at 180C for 12-35 minutes depending on size of muffin. This mix will make about 40 mini muffins or 24 large muffins.
