Ingredients:

125g fresh or frozen raspberries
150g fresh or frozen blueberries
2 tablespoon Cointreau
8 brandy-snap baskets
8 small scoops strawberry swirl ice cream
mint leaves, to garnish


Method:

  • Put the raspberries and blueberries in a bowl, pour on the Cointreau and stir gently to coat the berries.
  • Place each brandy-snap basket on a serving plate and spoon one small scoop of strawberry ice cream into each basket. Divide the mixed berries into eight and pile them on top of the ice cream, garnish with fresh mint leaves and serve immediately.
