Serves 4
Ingredients:
1/4 cup (60g) caster sugar
1 vanilla bean, split lengthways
300ml Champagne
500g fresh strawberries
Method:
- Place the sugar, vanilla bean and Champagne in a saucepan and warm over low heat. Cook stirring, for 3 minutes, or until the sugar has completely dissolved. Cool slightly.
- Put the strawberries in a serving bowl and pour the Champagne syrup over them, stirring gently to coat. Serve warm or refrigerate until cold, if preferred.
