Serves 4-6


Ingredients:

200g packet dried apricots
large strips of lemon peel, pith removed
300ml cream
1½ tbsp caster sugar
1 tsp lemon juice


Method:

  • Place the apricots, lemon peel and 1 cup (250ml) water in a small saucepan. Simmer for 15 minutes, or until the apricots are plump.

  • Meanwhile, pour the cream into a bowl and, using electric beaters, whip until soft peaks form.

  • Add the sugar and lemon juice to the apricots and stir well. Remove the lemon peel. Place in a food processor or blender and process until pureed, then transfer to a metal or glass bowl and sit over iced water to quickly cool the apricot mixture. Stir frequently unil cool.

  • Gently fold in the whipped cream and spoon the mixture into tumblers. Delicious served with wafers.
