Serves 4


Ingredients:

1½ cup (185g) self-raising flour
60g butter, chopped
1 egg
1½ tablespoon milk

Syrup:

1 cup (250g) sugar
40g butter
2 tablespoon golden syrup
¼ cup (60ml) lemon juice


Method:

  • Sift the flour and a pinch of salt into a bowl and add the chopped butter. Rub the butter into the flour with your fingertips until it resembles fine breadcrumbs. Make a well in the centre and add the combined egg and milk and mix with a flat-bladed knife, using a ctting action until the mixture comes together in a soft dough.
  • To make the syrup, place the sugar, butter, golden syrup, lemon juice and 2 cups (500ml) water in a large saucepan. Stir over medium heat for 3 minutes, or until the sugar has dissolved.
  • Bring to boil, then gently drop spoonfuls of the dough into the syrup to make 12 dumplings. Cover, reduce the heat to low and simmer, turning once, for 10-15 minutes, or until a knife inserted into a dumpling comes out clean.
  • Spoon onto serving plates and dizzle with some of the syrup. Serve imediately with some whipped cream, if desired.
