Serves 4
Ingredients:
75g butter
75g soft brown sugar
⅓ cup (80ml) golden syrup
4 small red apples, peeled, cored and each cut into eight wedges
8 Belgian waffles
Method:
- Place the butter, sugar and golden syrup in a non-stick frying pan and cook over medium heat for 2-3 minutes, or until the butter is melted and the sugar is dissolved. Add the apple and cook for 3-5 minutes, or until the apple is just tender. Reduce the heat and simmer for 2 minutes, or until the sauce is thick and syrupy.
- When the apple is almost cooked, lightly toast the waffles. Place two waffles on each serving plate, top each with four apple wedges, then drizzle with a little of the caramel syrup. Serve the waffles and apple warm with a dollop of thick cream or ice cream.
