(Balinese-style Fried Fish)

Serves 4-6


Ingredients:

750g fish
salt, to season fish
cooking oil for deep-frying
1 tbsp extra cooking oil
3 shallots, sliced
1 cup (250ml) water

Sauce:
1.3cm piece ginger root, finely chopped
½ tsp galangal
1 dsp tamarind paste & 3 tbsp water, mixed & strained to extract juice
1½ tbsp sweet soya sauce
1 tsp palm sugar
2 red chillies, chopped
½ tsp dried shrimp paste
½ tsp lemon grass
salt to taste


Method:

  1. Clean fish, cut into serving pieces and season with salt. Heat oil and deep fry fish-pieces till golden brown. Drain and arrange on a serving dish.
  2. Heat extra oil in a clean pan and stir-fry shallots till fragrant.
  3. Lower the heat and add the sauce ingredients. Stir-fry 3-4 minutes to mix well.
  4. Add water and simmer till sauce thickens.
  5. Pour sauce over fish and serve hot.
