Serves 4-6


Ingredients:

1kg mutton, cubed
2 large potatoes, peeled and cubed
a little turmeric powder mixed with ¼ tsp salt
3 tbsp cooking oil
1.3cm piece cinnamon, ground
2 cardamoms, ground
½ tsp ground sweet cummin
2 cloves garlic, minced
1 tsp sugar
3 medium onions, finely sliced
1 bay leaf
salt to taste
3 ripe tomatoes, sliced
2 stalks coriander, chopped
hot water, to cover

Marinade:
½ cup (120ml) yoghurt
½ tsp chilli powder
½ tsp turmeric powder
1 dsp vinegar
1.3cm piece ginger, ground


Method:

  1. Mix well the marinade ingredients and rub over the meat. Leave aside for 2 hours.
  2. Rub the turmeric mixture over potatoes.
  3. Heat oil and fry potatoes till done. Drain and keep aside. In the same oil, fry all the ground spices till fragrant. Add garlic and fry lightly, then stir in sugar till dissolved.
  4. Add onions and fry till soft. Add mutton mixture and bay leaf. Fry, stirring well, for 3 minutes. Reduce heat and cook covered till moisture is absorbed.
  5. Add salt, then mix in tomatoes and chopped coriander. Add hot water to cover. Cook covered till meat is done. Mix in the fried potatoes and remove pan from heat.
  6. Dish up and serve hot with boiled white rice.
