Serves 4
Ingredients:
½ cup green beans, washed & drained
salt to taste
2 pandan leaves, tied in a knot
1 cup (250ml) thick coconut milk
½ cup (110g) palm sugar, melted & strained
Method:
- Boil green beans in some water till tender. Reserve ½ cup (120ml) of the liquid.
- In a pan, combine green beans, reserved liquid, salt and pandan leaves. Simmer till fragrant.
- Add coconut milk and melted sugar. Bring to the boil, stirring. Remove from heat.
- Discard pandan leaves. Serve warm or cold.
