Serves 4-6


Ingredients:

1kg crabs, cleaned & cut up
1 cup (250ml) oil

Ground:
2 slices ginger
3 cloves garlic
2 red chillies

Sauce:
1 lime leaf
2 dsp sugar
3 dsp tomato sauce
2 tsp salt
2 tsp light soya sauce
2 tsp cornstarch
½ cup (120ml) water


Method:

  1. Heat oil over high heat. When smoking hot, fry crabs for 2 minutes. Remove and keep aside.
  2. Lower heat to medium. Add ground mixture and fry 2 minutes.
  3. Add crabs and sauce ingredients mixture. Stir-cook over low heat for 10 minutes. Add more water if necessary.
  4. Remove from heat and discard leaf. Serve hot.
