Serves 4
Ingredients:
2 cloves garlic, chopped
1 large onion, cut into wedges
500g pork loin, cut into thin slices
2 tbsp cornflour
¼ cup (60g) plum sauce
1 tbsp soy sauce
2 tsp hoisin sauce
Method:
- Heat a tablespoon of oil in a wok and stir-fry the garlic and onion over medium heat until softened. Remove and set aside.
- Coat each piece of pork lightly in the cornflour and season well with some salt and pepper. Add about 2 tablespoon of oil to the wok and when it is extremely hot, stir-fry the pork in 2 bayches until it is dark golden brown. Set aside with the garlic and onion.
- Add the plum, soy and hoisin sauces to the wok and return the garlic, onion and pork to the wok. Toss well to coat the meat and serve immediately with steamed rice.
