Serves 6-8


Ingredients:

1.3kg kangkung, washed & leaves picked, cut up stalks
2½ cup (620ml) boiling water
⅓ cup (75ml) salad oil
juice of 1 lemon

Ground:
8 chilli padi
7 red chillies
5cm piece dried shrimp paste, dry-fried
6 candlenuts
1¼ tsp salt


Method:

  1. Boil kangkung till just tender and still a bright green colour. Drain well.
  2. Mix together the oil, lemon juice and ground ingredients. Blend well.
  3. Mix in kangkung. Adjust seasoning.
  4. Serve with boiled white rice.
