Serves 4-6


Ingredients:

310g sago, washed & drained
water to cover
150ml thick coconut milk
¼ tsp salt
150g palm sugar, chopped
250ml water


Method:

  1. Dissolve salt in coconut milk and chill.
  2. Combine sago and water. Boil till sago becomes clear. Remove from heat and drain through a sieve. Rinse well under running tap.
  3. After 1 minute, drain sago well. Pack into rinsed individual moulds and refrigerate to set.
  4. Combine palm sugar and water. Bring to the boil. Simmer over low heat till sugar dissolves. When syrup thickens, remove and cool.
  5. Unmould sago pudding onto dessert plates. Spoon coconut milk and palm syrup over pudding before serving.

    Ingredients

    * 170 grams Plain Flour
    * 106 grams Suet
    * 64 grams Sugar
    * 3/4 desertspoon Ginger
    * 1/3 teaspoon Carb Soda
    * 1/3 cup Golden Syrup
    * 1/3 - 1/2 cup Milk

    Instructions
    Mix flour,suet.ginger&carb soda together & seive into bowl,add warm syrup & milk and mix lightly.Add mix to greased tin & steam for
    2&1/2 hours.
