Serves 4-6
Ingredients:
310g sago, washed & drained
water to cover
150ml thick coconut milk
¼ tsp salt
150g palm sugar, chopped
250ml water
Method:
- Dissolve salt in coconut milk and chill.
- Combine sago and water. Boil till sago becomes clear. Remove from heat and drain through a sieve. Rinse well under running tap.
- After 1 minute, drain sago well. Pack into rinsed individual moulds and refrigerate to set.
- Combine palm sugar and water. Bring to the boil. Simmer over low heat till sugar dissolves. When syrup thickens, remove and cool.
- Unmould sago pudding onto dessert plates. Spoon coconut milk and palm syrup over pudding before serving.

* 170 grams Plain Flour
* 106 grams Suet
* 64 grams Sugar
* 3/4 desertspoon Ginger
* 1/3 teaspoon Carb Soda
* 1/3 cup Golden Syrup
* 1/3 - 1/2 cup Milk
Instructions
Mix flour,suet.ginger&carb soda together & seive into bowl,add warm syrup & milk and mix lightly.Add mix to greased tin & steam for
2&1/2 hours.
