Serves 4


Ingredients:

2 tbsp ghee or oil
1kg chuck, blade or skirt steak, cut into cubes
3 onions sliced
3 tsp grated fresh ginger
3 cloves garlic, crushed
1 cinnamon stick
⅓ cup (80ml) brown vinegar
½ cup (125ml) beef stock
1 tsp sugar

Spice Mix:
½ tsp ground cumin
1 tbsp coriander seeds
½ tsp cardamon seeds
1 tsp ground fenugreek
½ tsp chilli powder
1 tsp ground turmeric
1 tsp mustard powder


Method:

  1. Heat the ghee or oil in a pan. Cook the steak in batches until brown and set aside.
  2. To make the spice mix, place all the ingredients in a food processor and process until finely ground.
  3. Add the onion, ginger, garlic and cinnamon to a pan and stir over low heat until the onion is soft. Add the spice mix and steak and stir until the meat is coated.
  4. Add the vinegar, stock, sugar and some salt and pepper. Cook, covered, over low heat for 1½ hours, or until the meat is tender. Discard the cinnamon and serve with rice.
