Serves 4
Ingredients:
2 tbsp ghee or oil
1kg chuck, blade or skirt steak, cut into cubes
3 onions sliced
3 tsp grated fresh ginger
3 cloves garlic, crushed
1 cinnamon stick
⅓ cup (80ml) brown vinegar
½ cup (125ml) beef stock
1 tsp sugar
Spice Mix:
½ tsp ground cumin
1 tbsp coriander seeds
½ tsp cardamon seeds
1 tsp ground fenugreek
½ tsp chilli powder
1 tsp ground turmeric
1 tsp mustard powder
Method:
- Heat the ghee or oil in a pan. Cook the steak in batches until brown and set aside.
- To make the spice mix, place all the ingredients in a food processor and process until finely ground.
- Add the onion, ginger, garlic and cinnamon to a pan and stir over low heat until the onion is soft. Add the spice mix and steak and stir until the meat is coated.
- Add the vinegar, stock, sugar and some salt and pepper. Cook, covered, over low heat for 1½ hours, or until the meat is tender. Discard the cinnamon and serve with rice.
