Serves 4


Ingredients:

1 bunch Chinese green vegetables (bok choy, choy sum, gai lan)
8 dried Chinese black mushrooms, soaked
2 tbsp vegetable oil
2 tbsp oyster sauce


Method:

  1. Thoroughly wash vegetables and drain well. Cut off thick stalks from greens and cut the leaves and stalks into strips.
  2. Trim stems from mushrooms, squeeze water from caps. Simmer in lightly salted water for 5 minutes then drain.
  3. Plunge the vegetable stems into boiling water to cook for 1-2 minutes. Remove, then briefly blanch the leafy parts and drain well.
  4. Toss vegetables and mushrooms in oil over moderate heat till well coated. Serve dressed with oyster sauce.

Note: Canned straw mushrooms or champignons can replace the black mushrooms.
