Serves 4
Ingredients:
1 bunch Chinese green vegetables (bok choy, choy sum, gai lan)
8 dried Chinese black mushrooms, soaked
2 tbsp vegetable oil
2 tbsp oyster sauce
Method:
- Thoroughly wash vegetables and drain well. Cut off thick stalks from greens and cut the leaves and stalks into strips.
- Trim stems from mushrooms, squeeze water from caps. Simmer in lightly salted water for 5 minutes then drain.
- Plunge the vegetable stems into boiling water to cook for 1-2 minutes. Remove, then briefly blanch the leafy parts and drain well.
- Toss vegetables and mushrooms in oil over moderate heat till well coated. Serve dressed with oyster sauce.
Note: Canned straw mushrooms or champignons can replace the black mushrooms.
