Makes 20-24


Ingredients:

1 pack won ton wrappers
600g finely minced pork
100g bamboo shoots, finely chopped
1 spring onion, finely chopped
2 tbsp finely chopped fresh coriander
2 tbsp light soy sauce
vegetable oil for deep frying


Method:

  1. Cover wrappers with a cloth until needed.
  2. In a food processor, grind pork until smooth. Transfer to a bowl. Add bamboo shoots, onion, coriander and sauce; work to smooth paste using hands.
  3. To form the dumplings, place a rounded tablespoon of the filling in the centre of a wrapper and press the edges of the wrapper up around the filling to almost enclose it. Squeeze gently so the wrapper adheres to the filling with the top of the filling partially exposed and the edges of the wrapper almost meeting on top. Tap the base of each Dim Sim on the table to flatten.
  4. Heat deep oil to moderately hot and fry the Dim Sims, several at a time, until the pastry is golden brown, about 2 minutes. Remove and drain on absorbent paper.
  5. Serve the Dim Sims hot with small dishes of soy sauce for dipping.

Note: If preferred, instead of frying, steam the dumplings for about 6 minutes.
