A traditional Japanese noodle made from wheat flour and oil. Somen noodles are best used in soups, stir-fries and salads. Available fresh or dried in an array of colours.
Substitute: udon noodles, rice stick noodles or thin spaghetti.
Cooking:
Cook in boiling water for abour 3 minutes.
