A soft, creamy white Japanese noodle made from wheat flour dough, available fresh or dried and sold in bundles in a variety of widths. Udon noodles are ideal for soups and stir-fries.
Substitute: soba noodles, linguine or fettuccine.

Cooking:
Fresh: Cook in boiling water for about 2½ minutes.
Dried: Cook in boiling water for 10-12 minutes.
