Serves 4


Ingredients:

200g soba noodles
1 tbsp vegetable oil
2 tsp Asian sesame oil
3 cloves garlic, crushed
2 tsp peeled and grated fresh ginger
½ tsp red pepper flakes
1 onion, chopped
1 red capsicum, seeded and sliced
1 yellow capsicum, seeded and sliced
2 small zucchini, julienned
150g green beans, trimmed
3 tbsp soy sauce
2 tbsp rice wine
3 tsp palm sugar or brown sugar
1½ tbsp Worcestershire sauce
⅓ cup (45g) unsalted roasted peanuts, chopped


Method:

  • In wok or frying pan over medium-high heat, warm vegetable and sesame oils. Add garlic, ginger, red pepper flakes and onion and cook until aromatic, about 1 minute. Add capsicums, zucchini and beans and stir-fry until slightly softened, about 3 minutes. Combine soy sauce, rice wine, sugar, Worcestershire sauce and noodles. Add to wok or pan and stir-fry until heated through, about 2 minutes.
  • To serve, divide among individual plates and top with peanuts. Serve immediately.
