Ingredients:

300g long beans, cut into 3cm lengths
1 sprig curry leaves
1 level tsp turmeric powder
1 level tsp chilli powder
1½ tsp salt
8 tbsp oil


Method:

  • Put long beans in a bowl, sprinkle with turmeric, chilli powder and salt and mix thoroughly. Leave for 10-15 minutes.
  • Heat oil, fry curry leaves till crispy then add beans and stir fry from time to time. As beans start to get crisp, keep stirring constantly until the beans are very crisp. Remove from heat.
