Ingredients:

600g fish, Spanish mackerel, cut into medium sized pieces
5 drumsticks, peel and cut into 6cm lengths

soak for about an hour:
2 tbsp coriander seeds
1 tsp fennel seeds
½ tsp black pepper corns
½ tsp cumin seeds
1 pc (size of almond) dried turmeric
10 dried chillies

2 sprigs curry leaves
1 tsp fish curry spices
½ tbsp tamarind, mix with 1½ cups water, strain to obtain juice
salt to taste
3 tbsp oil


Method:

  • Grind soaked spices into a fine paste, adding chillies last. In a bowl, combine fish with curry paste, 1 sprig curry leaves and salt.
  • Heat oil, add 1 sprig curry leaves and fish curry spices, and fry till fragrant. Add fish and drumstick, fry till fragrant then add tamarind juice. Cover and bring to the boil over low heat.
  • When it has boiled, stir, cover again and cook for another 10 minutes.
