Ingredients:

300g spinach, chop off roots, wash and cut fine
450g grated coconut, add 1 cup water to get an equal amount of milk

for frying:
½ onion, slice thinly
1 green chilli, cut slantwise into 5-6 pieces
½ tsp brown mustard seeds
½ tsp turmeric powder
1 tsp cumin powder
½ tsp chilli powder
3-4 curry leaves

2 tbsp oil
salt to taste


Method:

Heat oil, add ingredients for frying. Fry till onions are a light brown then add spinach and stir to mix it with the spices. Add coconut milk and salt and allow to cook, stirring now and then. When spinach is soft and a little gravy is left, remove from heat.
