Ingredients:

600g chicken, debone and cut meat into small cubes

Grind to a fine paste:
1 tsp cumin seeds, soak for ½ hour
1 tsp black peppercorns, soak for ½ hour
2 slices (1cm thick) ginger
3 cloves garlic
2 red chillies

1 tsp coriander powder
salt to taste
1 tbsp plain yoghurt or juice of ½ lemon
3 tbsp oil


Method:

  • Combine ground ingredients, coriander powder, salt and yoghurt or lemon juice with chicken. Leave to marinate for about 10 minutes.
  • Heat oil, add chicken and cook till chicken is tender and fairly dry.
  • Alternatively, put marinated chicken on a tray, brush with oil and grill.
  • To serve: Put chicken pieces with pickled onions through cocktail sticks or little skewers.
