Ingredients:
2 soft boiled eggs (3 mins), shell
1 onion, slice fine
2 green chillies, slash into 4 lengthwise and chop
40g grated cheddar cheese
1 tomato, remove seeds, chop fine
2 sprigs coriander leaves, chop fine
12 slices of sandwich bread
Method:
- Put eggs in a bowl and mash with fork. Add the rest of the above ingredients and a dash of black pepper. Mix well.
- Spread slices of bread thinly with margarine or butter.
- Spread filling on 6 slices and cover with the other 6 slices.
- Cut each sandwich into triangles or fingers.
