Ingredients:

450g mutton, cut into small cubes
2 green chillies, cut into thin strips lengthwise
2 red chillies, cut into thin strips lengthwise
1 onion, cut into half, then slice thinly
3 tbsp meat curry powder
salt to taste
1 sprig curry leaves, use leaves only
½ cup water
5 tbsp oil
2 cups water


Method:

  • Combine mutton with all the above ingredients in a bowl (except oil and 2 cups water).
  • Heat oil, add mutton and fry till fragrant. Add water, cover and bring to the boil, then continue boiling, stirring now and then.
  • Lower heat when the amount of liquid is reduced. When curry is almost dry, remove from heat.
  • Garnish with potato crisps or small coriander leaves.
