Serves 4
Ingredients:
1 banana
1 egg
85g cooked chicken, finely chopped
200g can sweetcorn kernels, drained
2 spring onions, finely chopped
½ tsp ground cumin
2 tsp chopped fresh coriander
salt and cayenne pepper
¾ cup (85g) self-raising flour
oil for frying
Method
- Mash the banana. Mix in the egg, chicken, sweetcorn, spring onions, cumin, coriander, salt and a pinch of cayenne pepper. Add the flour and form a soft batter.
- Heat oil in a heavy frying pan or saucepan and add spoonfuls of the mixture, cooking for about 1 minute, turning halfway through cooking, until golden brown.
- Remove from the pan with a slotted spoon and drain on absorbent kitchen paper. Serve the fritters warm with a chilli dip or relish.
