Makes 18
Ingredients:
3 tsp pine nuts
¼ cup (55ml) olive oil
1 onion, finely chopped
350g lean minced beef
1 tsp ground cinnamon
1 tbsp chopped fresh parsley
salt and pepper
6 sheets filo pastry
Tzatziki, to serve
Method:
- In a frying pan, heat pine nuts until golden. Remove from pan and set aside. Heat 2 tbsp oil in frying pan, add onion and cook until soft. Stir in beef and cook, stirring, for a few minutes until brown all over. Add cinnamon, parsley, pine nuts, salt and pepper. Cook for a further 10 minutes, then leave to cool.
- Preheat oven to 180°C. Cut each sheet of filo pastry into 3 long strips. Brush strips with remaining oil. Spread 1 tsp of filling in a line on one end of each strip, leaving a small margin on either side. Roll over twice and fold long sides over the edge, then continue rolling to make a tube. Place fingers on a baking sheet. Bake in the oven for 20-30 minutes until crisp and golden. Serve with Tzatziki.
