Serves 4


Ingredients:

375g firm tofu
½ cup (90g) rice flour
2 tsp ground coriander
1 tsp ground cardamom
1 clove garlic, crushed
½ cup (125ml) water
oil, for deep-frying


Method:

  • Drain the tofu and cut it into 1cm thick slices.

  • Combine the flour, coriander, cardamom and garlic in a bowl; add the water and stir until smooth.

  • Heat the oil in a large pan. Dip the tofu slices into the spice mixture and coat thickly. Place the tofu slices into the oil, 3 at a time, and cook over medium heat for about 2 minutes, or until crisp and golden brown. Drain on paper towels.

Note: Serve the tofu with stir-fried vegetables and any sauce of your choice.
