Serves 4-6
Ingredients:
3 medium cucumbers
2 tbsp white vinegar
2 tsp white sugar
1-2 tbsp chilli sauce
½ red onion, chopped
½ cup (15g) fresh coriander leaves
1 cup (160g) roasted unsalted peanuts, chopped
2 tbsp crisp fried garlic (see Note)
½ tsp chopped red chilli
1 tbsp fish sauce
Method:
- Cut the cucumbers in half lengthways. Remove the seeds with a teaspoon and slice the cucumbers thinly.
- Combine the white vinegar and sugar and stir until the sugar has dissolved. Transfer the mixture to a large bowl and stir in the cucumber, chilli sauce, red onion and the coriander leaves. Allow to marinate for about 45 minutes.
- Just before serving, toss through the peanuts, garlic, red chilli and fish sauce.

Note: Crisp fried garlic can be bought in Asian food stores. You can also make your own by finely slicing a few garlic cloves and cooking them in oil until crisp and golden-brown. Drain and season with salt just before serving.
