Serves 4
Ingredients:
4 tbsp cooking oil
6 salam leaves or 2 dried bay leaves
500g beef, cut into small cubes
1½ cup (375ml) thick coconut milk
2 pieces dried tamarind slices
salt, to taste
coriander leaves, to garnish
Ground Ingredients:
5 shallots
2 big onions, sliced and fried
1 tbsp coriander seeds
1 tsp white cummin seeds
1 dsp white peppercorns
5 candlenuts
2 tsp sugar
1.3cm piece galangal
Method:
- Heat oil. Stir-fry ground ingredients and salam leaves till golden brown.
- Add meat and fry till well coated with the fried mixture.
- Add coconut milk, tamarind slices and salt to taste. Cook till nearly dry, stirring frequently.
- Remove from heat. Discard salam leaves. Garnish and serve with boiled white rice and other dishes.
