Serves 4


Ingredients:

4 tbsp cooking oil
6 salam leaves or 2 dried bay leaves
500g beef, cut into small cubes
1½ cup (375ml) thick coconut milk
2 pieces dried tamarind slices
salt, to taste
coriander leaves, to garnish

Ground Ingredients:
5 shallots
2 big onions, sliced and fried
1 tbsp coriander seeds
1 tsp white cummin seeds
1 dsp white peppercorns
5 candlenuts
2 tsp sugar
1.3cm piece galangal


Method:

  1. Heat oil. Stir-fry ground ingredients and salam leaves till golden brown.
  2. Add meat and fry till well coated with the fried mixture.
  3. Add coconut milk, tamarind slices and salt to taste. Cook till nearly dry, stirring frequently.
  4. Remove from heat. Discard salam leaves. Garnish and serve with boiled white rice and other dishes.
