Makes 8 pancakes


Ingredients:

3 large eggs
1 cup (122g) flour
1 heaped teaspoon baking powder
1/2 cup (110ml) milk
Pinch salt

Optional Toppings:
Corn on the cob
Bacon or pancetta
Blueberries
Bananas
Stewed apples
Chocolate
Maple syrup


Method:

  • First, separate the eggs, putting the whites in 1 bowl and the egg yolks into another. Add the flour, baking powder and milk to the egg yolks and mix to a smooth thick batter. Whisk the whites with the salt until they form stiff peaks. Fold into the batter; it is now ready to use.
  • Heat a non-stick pan on a medium heat. Pour a little oil onto some kitchen paper and spread onto the pan. Pour some of your batter into the pan and fry for a couple of minutes until it starts to look golden and firm. At this point, sprinkle your chosen flavouring onto the uncooked side before loosening with a spatula and flipping the pancake over. Continue frying until both sides are golden.
  • You can make these pancakes large or small, to your liking. You can serve them simply dowsed in maple syrup and even some butter or creme fraiche. Or try one of the optional toppings.

    Ingredients

    * 1 1/2 cups Plain Flour
    * 1 teaspoon Bi-Carb Soda
    * 1/4 cup Caster Sugar
    * 2 eggs
    * 1 cup Buttermilk
    * Serving:
    * 250 grams thawed Berries
    * Honey or Maple syrup

    Instructions
    1.Sift the Flour and bi-carb soda into a large bowl and stir in the sugar. In a medium bowl whisk egg yolks and buttermilk until combined. Add flour mix until smooth.

    2.Using an electric mixer, beat egg whites until soft peaks form.
    Mix 1/4 of the egg whites though the batter, then gently fold in the remaining egg white.

    3.Heat a lightly grease frypan. Drop about 2 tablespoons of batter onto the pan.
    Cook for two minutes, or unitl the underside is golden brown. Flip the pancake over, cook the other side. keep warm while cooking remaining pancakes. repeat with remaining batter, greasing the pan when necessary.

    4.Top with berries and drizzle with honey or maple syrup.
