(Beef Rendang)
Serves 4
Ingredients:
500g beef, cut into 2.5cm cubes
salt and pepper to taste
3¾ cup (950ml) thick coconut milk
1 stalk lemon grass, crushed
1 turmeric leaf, shredded
Ground:
12 red chillies
5 cloves garlic
15-20 shallots
2.5cm piece galangal
2.5cm piece ginger root
1.3cm piece turmeric root
2 tsp salt
Method:
- Season meat with salt and pepper. Leave aside for 20-30 minutes.
- In a pan, mix together the coconut milk and ground ingredients. Place over medium heat and bring slowly to the boil, stirring often.
- Add meat and continue boiling for 10 minutes. Put in lemon grass, turmeric leaf and salt and pepper to taste.
- Reduce heat to low. Simmer till meat is tender and dark brown in colour. When the gravy becomes thick and oily, remove from heat.
- Discard lemon grass and turmeric leaf. Serve hot with lontong (compressed rice) or lemang (glutinous rice delicacy).
