Serves 4-6


Ingredients:

500g large prawns
3 slices ginger
1 stalk spring onion
2 tbsp cooking oil
cooking oil for deep-frying

Sauce:
3 tbsp light soya sauce
2 tbsp rice wine
½ tsp salt
1 tsp sugar
1 tsp cornflour
1 tbsp water


Method:

  1. Wash prawns thoroughly in running water. Cut off sharp points and feet. Do not remove shell.
  2. Slice thinly white bulb of spring onion. Cut green portions into 1.3cm lengths.
  3. Heat cooking oil for deep frying. When hot, deep fry prawns for about 10 minutes. Remove and drain.
  4. Mix well sauce ingredients. Leave aside.
  5. Heat cooking oil in a pan. When hot, put in ginger and white portion of spring onion and fry until spring onion is soft.
  6. Add sauce ingredients, prawns and green portions of spring onion.
  7. Stir well until prawns are well coated with sauce.
  8. Dish up and serve hot.
