(Mixed Vegetables in Coconut Gravy)
Serves 4-6
Ingredients:
125g cabbage, shredded
125g string beans, stringed & sliced
125g carrot, scraped, diced & precooked
125g green peas
60g bean sprouts, tailed
60g raw peanuts, roasted & skinned
2 tbsp cooking oil
125g cooked chicken meat, shredded
1 medium tomato, blanched, skinned & chopped
1.2 litre thin coconut milk
2.5cm piece galangal, pounded
seasoning to taste
1 tbsp chopped prawns
300ml thick coconut milk
brown sugar to taste
Ground:
ground fine together:
½ tsp ground cummin
2 tsp coriander powder
3 red chillies, seeded
2 cloves garlic
4 shallots
Method:
- Heat oil and fry ground ingredients till aromatic. Add chicken meat and continue frying, sprinkling a little hot water if necessary.
- Add tomato and cook till pulpy. Reduce heat. Stir in thin coconut milk. Add galangal and seasoning.
- When boiling, add cabbage and string beans. Cook over medium heat till three quarter done. Add prawns, peanuts and carrot.
- When just done, add peas and bean sprouts. Cook for another minute. Add thick coconut milk and sugar. Heat through and remove.
- Serve hot with boiled white rice.
