(Mixed Vegetables in Coconut Gravy)

Serves 4-6


Ingredients:

125g cabbage, shredded
125g string beans, stringed & sliced
125g carrot, scraped, diced & precooked
125g green peas
60g bean sprouts, tailed
60g raw peanuts, roasted & skinned
2 tbsp cooking oil
125g cooked chicken meat, shredded
1 medium tomato, blanched, skinned & chopped
1.2 litre thin coconut milk
2.5cm piece galangal, pounded
seasoning to taste
1 tbsp chopped prawns
300ml thick coconut milk
brown sugar to taste

Ground:
ground fine together:
½ tsp ground cummin
2 tsp coriander powder
3 red chillies, seeded
2 cloves garlic
4 shallots


Method:

  1. Heat oil and fry ground ingredients till aromatic. Add chicken meat and continue frying, sprinkling a little hot water if necessary.
  2. Add tomato and cook till pulpy. Reduce heat. Stir in thin coconut milk. Add galangal and seasoning.
  3. When boiling, add cabbage and string beans. Cook over medium heat till three quarter done. Add prawns, peanuts and carrot.
  4. When just done, add peas and bean sprouts. Cook for another minute. Add thick coconut milk and sugar. Heat through and remove.
  5. Serve hot with boiled white rice.
