Serves 6


Ingredients:

750g fish, cut into small pieces
3 tbsp asam & 1 cup (250ml) water, mixed well & strained
3 small slices pineapple
1 tomato, cut into half
1 brinjal, cut into quarters
3 red chillies, seeded
3 small sour star fruits
2 sprigs polygonum
6 tbsp cooking oil

Pounded:
5 dried chillies, soaked & seeded
10 small onions
4 slices galangal
5 candlenuts
1.3cm dried shrimp paste
3 stalks lemon grass
2.5cm piece turmeric
5 red chillies

Seasoning:
1 tbsp sugar
½ tsp salt


Method:

  1. Heat cooking oil. Fry pounded ingredients for 5 minutes.
  2. Add asam water, pineapple slices, tomato, brinjal, chillies, polygonum and star fruits.
  3. Season and bring to the boil for 5 minutes.
  4. Add fish pieces and simmer till cooked.
  5. Dish out and serve hot.
