Serves 4
Ingredients:
310g sirloin steak, thinly sliced
cooking oil
2 cloves garlic, chopped
1 tbsp onion slices
1 tbsp fermented black beans, mashed
1 red chilli, seeded and chopped
2 green capsicums, cut into bite-size pieces
½ tsp cornstarch blended with 1 tbsp water
Marinade:
1 tsp minced ginger
1 tsp sesame oil
1 tsp cornstarch
½ tsp suagr
Seasoning:
1 tbsp light soya sauce
½ tsp sugar
30ml water
a little pepper
1 tsp sesame oil
2 tsp cooking wine
Method:
- Marinate beef slices for 30 minutes.
- Heat 2 tablespoons oil in a pan. Stir-fry beef till colour changes. Remove and set aside.
- Heat 1 tablespoon oil in pan. Saute garlic and onion slices till onion is soft.
- Add fermented black beans and chopped chillies. Stir-fry for 3 minutes.
- Add capsicums and mix well. Cook for 1 minute.
- Return beef slices and add soya sauce, sugar and water. Stir and bring to boil.
- Stir in the rest of the seasoning ingredients. Thicken gravy with cornstarch mixture.
- Dish up and serve hot.
