Serves 4


Ingredients:

310g sirloin steak, thinly sliced
cooking oil
2 cloves garlic, chopped
1 tbsp onion slices
1 tbsp fermented black beans, mashed
1 red chilli, seeded and chopped
2 green capsicums, cut into bite-size pieces
½ tsp cornstarch blended with 1 tbsp water

Marinade:
1 tsp minced ginger
1 tsp sesame oil
1 tsp cornstarch
½ tsp suagr

Seasoning:
1 tbsp light soya sauce
½ tsp sugar
30ml water
a little pepper
1 tsp sesame oil
2 tsp cooking wine


Method:

  1. Marinate beef slices for 30 minutes.
  2. Heat 2 tablespoons oil in a pan. Stir-fry beef till colour changes. Remove and set aside.
  3. Heat 1 tablespoon oil in pan. Saute garlic and onion slices till onion is soft.
  4. Add fermented black beans and chopped chillies. Stir-fry for 3 minutes.
  5. Add capsicums and mix well. Cook for 1 minute.
  6. Return beef slices and add soya sauce, sugar and water. Stir and bring to boil.
  7. Stir in the rest of the seasoning ingredients. Thicken gravy with cornstarch mixture.
  8. Dish up and serve hot.
