Ingredients:

600g fresh flat rice flour noodles (kwei teow)
120g beef, thinly sliced
300g shrimps, peeled
20 fish balls, cut in halves
300g spring greens, cut into 5cm lengths

Grind coarsely:
8 shallots
2 small cloves garlic

Mix together:
2 tsp cornflour
3 tbsp light soya sauce
1 tsp pepper
1 cup water

6 tbsp oil
salt to taste


Method:

Heat oil, add ground ingredients and fry till fragrant. Add beef, shrimps, fish balls, spring greens and salt, stir frying after each addition. Add cornflour mixture. When bubbling, add kwei teow and stir, mixing all ingredients well. Serve immediately.
