How to Clean a Squid (Sotong)

1. Take squid in one hand, hold head firmly with the other hand and gently ease it out of the body.
2. Push down tentacles and cut off hard knob visible on the top.
3. Cut out eyes.
4. Cut off soft jelly-like pieces at the opposite end of tentacles.
5. Gently remove ink bag taking care not to pierce it.
6. Hold body in one hand and pull out soft bone from body with the other.
7. Peel off mottled skin from body.
