Ingredients:
½ packet (15g) agar-agar strands, soak for ½ an hour
4 cups water
½ can (410g/369ml) evaporated milk
1 egg
225g granulated sugar
1 tsp orange essence
½ tsp yellow food colouring
Method:
- Boil agar-agar in water. When dissolved, strain into another saucepan. Mix the milk with egg, half the amount of sugar and essense in a large bowl. Dissolve the rest of the sugar in a large saucepan and cook till sugar becomes brown and cystallizes.
- Combine milk mixture with jelly and add to cystallized sugar. Cook, stirring all the time, until it boils, then continue cooking for a minute or two. Remove from heat and pour into large jelly moulds or trays. Leave to cool, then chill in fridge.
