Ingredients:

300g bean sprouts, remove tails, wash and drain
1 cup grated coconut
salt to taste
2 limes, extract juice

grind to a fine paste:
10 dried chillies, soak in water to soften
5 shallots
15 dried prawns, soak, wash and drain


Method:

  • Place a shallow frying pan over low heat.
  • Put grated coconut into the dry frying pan and add the ground ingredients and salt. Keep on stirring until fragrant. Add bean sprouts and stir for 1-2 minutes only. Do not overcook the bean sprouts.
  • Remove from heat and sprinkle lime juice over the bean sprouts. Mix before putting in serving dish.
