Mix together 500g peeled, deveined and finely chopped raw prawns, 300g lean pork mince, 1 teaspoon salt, 3 finely chopped spring onions, 3 tablespoons finely chopped water chestnuts, 3 teaspoons soy sauce and 2 teaspoons dry sherry. Cut 3 peppers (capsicums) lengthways into 3-4 segments and remove the seeds and membrane. Fill the pepper wedges with filling and cut in half. Heat 1 tablespoon oil in a wok. Cook the pepper pieces in 2 batches over medium-high heat for 3-4 minutes, or until well browned. Turn over and cook for a further 3 minutes. Repeat with remaining pieces. Serve immediately.
