Serves 4

Ingredients:

400g pork fillet
1-2 tbsp Indonesian Sambal Paste
1 tbsp oil
1½ cup (375ml) coconut milk
chopped spring onion, to garnish


Method:

  • Cut the pork fillet into thin strips. Place the strips in a bowl with the sambal paste and oil, and toss until well combined.
  • Heat a heavy-based wok to very hot; stir-fry the pork for about 2 minutes in 2 batches, until tender and lightly browned. Return all the meat to the wok.
  • Add the coconut milk and simmer, uncovered, for 2 minutes. Garnish with spring onion and serve with rice.
