Serves 6

Ingredients:

500g boneless white fish fillets
1 tbsp Indonesian Sambal Paste
2 tbsp chopped fresh lemon grass (white part only)
2cm piece fresh ginger, finely grated
1 tsp ground cumin
3 spring onions, finely chopped
1 egg, lightly beaten
1 tbsp chopped fresh mint
lemon wedges, to serve

Method:

  • Preheat the oven to moderate 180°C.
  • Place the fish, sambal paste, lemon grass, ginger, cumin and spring onion into a food processor and process until a smooth paste is formed.
  • Transfer the fish mixture to a bowl, and mix through the egg and mint.
  • Divide the mixture into 6 equal portions, and shape each portion into a sausage. Wrap each portion in a 15x25cm piece of baking paper and bake for 15 minutes. Serve with a squeeze of lemon juice.
