Serves 4

Ingredients:
1.25kg raw king prawns
¾ cup (185ml) coconut cream
1 tsp finely grated lime or lemon rind
1 tbsp lime or lemon juice
2 tsp light soy sauce
½ tsp shrimp paste
1 tbsp peanut oil
1 small onion, cut into 8 pieces
chopped spring onion, to garnish

Method:
  • Peel and devein the prawns, leaving the tails intact.
  • Combine the coconut cream, rind, juice, soy sauce and shrimp paste in a bowl.
  • Heat the oil in a frying pan; add the onion and stir-fry over medium heat until soft. Add the prawns and stir-fry for 2 minutes.
  • Add the coconut cream mixture and stir for 2-3 minutes, until the sauce has thoroughly heated through. Garnish with spring onion and serve with rice.
