Serves 4


Ingredients:

400g lean boneless lamb
1 tsp finely chopped garlic
2 tsp grated ginger
1 tbsp dark soy sauce
1 tbsp dry sherry
1 tbsp sesame oil
2 tsp cornflour
1 large onion
2 tbsp vegetable oil
2 tsp sesame seeds, optional


Method:

  1. Cut the lamb into paper thin slices and then into short strips. Place in a dish and add the garlic, ginger, soy sauce, sherry, sesame oil and cornflour. Mix well and leave to marinate for 2 hours.
  2. Cut the onion into curved slices by cutting from top to base. Separate the pieces.
  3. Heat oil in a wok. Stir-fry onions briefly. Remove. Stir-fry meat for about 1-2 minutes or until just cooked. Return onions to wok.
  4. Serve, sprinkled with sesame seeds. If preferred, serve meat spooned over onions.

    * 1 cup Rice
    * 600 grams Lamb Leg Steaks
    * 1 Onion ( sliced)
    * 1 Capsicum(sliced)
    * 1 cup Water
    * 1 teaspoon Ginger
    * 1 teaspoon Garlic
    * 1 tablespoon Hoisin Sauce
    * 1 tablespoon Oyster Sauce
    * 2 tablespoons Soy Sauce
    * 1 teaspoon Beef Stock Powder
    * 1 teaspoon Sugar
    * 2 tablespoons Cornflour

    Notes
    I serve this dish on rice. Other vegetables could easily be added or substituted.
    The lamb can be marinated early to save on time.
