Serves 6-8
Ingredients:
1kg meaty spare ribs
2 tbsp salted black beans, chopped
4-6 cloves garlic, finely chopped
2 tbsp chopped ginger
1 fresh red chilli, finely chopped
¼ cup light soy sauce
1 tbsp dark soy sauce
3 tbsp brown sugar
1½ cup water
2 tbsp vegetable oil
1 large onion, chopped
1 green capsicum, chopped
Method:
- Cut ribs into 4-cm pieces; place in ovenproof dish. Scatter on black beans, garlic, ginger and chilli; add soy sauces, sugar and water.
- Cover the dish and bake in preheated moderate oven (180°C) or place in a steamer and cook over gently simmering water for 1½ hours.
- Heat oil in wok and stir-fry onion and capsicum until softened. Add pork ribs and juices and cook 5-6 minutes. Serve hot with rice.
