Ingredients:

1 (1.5kg) chicken, cut into average size pieces
1 tsp pepper
2 tbsp dark soya sauce
oil for deep frying
120g cashew nuts


Method:

  • Combine chicken with pepper, honey and soya sauce and leave to marinate for 1 hour. Drain chicken. Heat oil and deep fry chicken till golden brown.
  • Deep fry cashew nuts till golden brown. When serving, sprinkle cashew nuts over chicken and garnish with slices of cucumber. Serve hot.
