Ingredients:

4 eggs
1 big onion, chop
1-2 red chillies, slice
1 spring onion, chop
2 stalks coriander leaves, chop
½ tsp pepper
salt to taste
1 tbsp oil


Method:

  • Break eggs into bowl, beat, add chopped and sliced ingredients, pepper and salt and mix well.
  • Heat oil. Pour half the egg mixture into pan and fry over moderate heat, first one side then the other. Repeat, for the balance mixture.
