Ingredients:

1 cup grated coconut
5 shallots, peel
2 green chillies
1½ tsp tamarind, remove seed
1cm cube ginger
1 clove garlic
1 sprig curry leaves, discard stalk
½ tsp salt


Method:

Grind coconut, then add chillies, ginger, garlic, salt, tamarind and shallots. When these have been ground to a fine paste, put into a serving dish.


Note: This sambal tastes best when traditional grinding stone is used to grind ingredients.
