Ingredients:
100g cauliflower, cut into small florets
1 small carrot, cut into strips or cubes
8 french beans, cut into small pieces
½ medium size cucumber, remove seeds and cut into small cubes
2 tomatoes, remove seeds and cut into small cubes
2 green chillies
juice of ½ lemon
4 sprigs coriander leaves, chop
4 sprigs mint leaves, chop
4 tbsp vinegar
1 tbsp sugar
pinch of salt
½ tsp black pepper
½ tsp chilli powder
½ tsp cumin powder
Method:
Dissolve sugar and salt in vinegar. Add spice powders, stir and cool. Combine all vegetables in a bowl, pour lemon juice over then pour cooled vinegar. Mix well. Sprinkle coriander and mint leaves over vegetables.
